- Nitec in Baking Graduates
Participants who have achieved at least 80% attendance will be awarded the Post-Nitec in Cake Decoration issued by Institute of Technical Education (ITE).
- Public applicants without attending the Nitec in Baking course
Participants who have achieved at least 80% attendance will be awarded the Certificate in Cake Decoration issued by Baking Industry Training Centre.
Entry Requirements
- No formal academic qualification but related practical experience will be of some advantage.
- Students can progress onto Post-Nitec in Cake Decoration are required to have successfully completed the full Nitec in Baking (960 hrs).
Post-Nitec in Wedding Cake Decoration
The wedding cake decoration course provides participants with the skills and knowledge to do fine sugarcraft work such as delicate sugar lace pieces, pipe embroidery, filigree work, flounce and frills. Participants are also taught extension work to produce an elegant 3-tiered wedding or celebration cake.
You will be assessed on your competent performance of tasks performed or produced throughout the course.
Course Content
- Produce well-covered cake boards, complete with cleats.
- Produce a flower spray or floodwork design for the wedding or celebration cake using cutters or modelling tools, florist wire or florist tape.
- Decorate the sides of the cake using drop-line piping, extension or bridgework and flounce and frills.
- Construct a 3-tiered wedding or celebration cake using suitable cake-structure designs, position of pillars and wiring of flowers.
- Observe safety and sound hygiene principles as they apply to cake decoration.
- You will be assessed on the work you produced throughout the courses.
- Portfolio to be produced on topics covered.
